Preparation
  1. Mix yogurt, olive oil, lemon juice, salt, and pepper in a bowl for the dressing.
  2. Toast the bread slices to your preference.
  3. Mash the avocado and spread it evenly on one slice of toasted bread.
  4. Layer the tomato slices on top of the avocado.
  5. Drizzle the creamy yogurt dressing over the tomatoes.
  6. Add fresh herbs for garnish.
  7. Top with the second slice of bread, slice in half, and serve immediately.

Notes

This sandwich pairs well with a salad or crispy sweet potato fries. It's best when fresh, but leftovers can be stored in the fridge for up to a day.
