Ingredients
  

Fruit Filling
  • 2 cups chopped strawberries Fresh or frozen works well!
  • 2 cups chopped rhubarb Make sure to wash and chop it first.
  • 3/4 cup granulated sugar Adjust to taste if your fruit is super sweet.
  • 2 tbsp cornstarch Helps thicken the fruit filling.
  • 1 tbsp lemon juice Adds brightness to the flavors.
Crumb Mixture
  • 2 1/2 cups all-purpose flour For the base and crumb.
  • 1 cup rolled oats Adds a hearty texture.
  • 1 cup brown sugar Gives a nice caramel flavor.
  • 1 tsp ground cinnamon Adds warmth to the bars.
  • 1 tsp baking powder Helps the crumb rise slightly.
  • 1/4 tsp salt Enhances all the flavors.
  • 1 cup unsalted butter, cold and cubed Keep it cold for crumbly dough.

Method
 

Preparation
  1. Preheat oven to 350°F and prepare a 9x13 baking pan.
  2. Mix strawberries, rhubarb, granulated sugar, cornstarch, and lemon juice in a bowl and set aside.
  3. Combine flour, oats, brown sugar, cinnamon, baking powder, and salt in a separate bowl.
  4. Cut in the butter until the mixture resembles coarse crumbs.
Assembly and Baking
  1. Press two-thirds of the crumb mixture into the pan to form the crust.
  2. Spread the fruit filling evenly over the crust.
  3. Sprinkle the remaining crumb mixture on top and bake for 40–45 minutes.
  4. Let cool completely before slicing into bars.

Notes

These bars can be served with vanilla ice cream or whipped cream for added richness. Dust with powdered sugar for a cozy touch.
