Ingredients

For the candied walnuts
  • 1 Tablespoon butter (unsalted) Use unsalted for better control of saltiness.
  • 1 cup walnuts (barely chopped) Chopping them a bit enhances their crunch.
  • 1 Tablespoon brown sugar This adds a wonderful sweetness to the walnuts.
For the salad
  • 4 to 5 ounces lettuce mix Choose your favorite mix for added flavor.
  • 2 cups strawberries (cut in half or quarters) Fresh strawberries are best!
  • 1 cup blueberries Rinse them right before adding to the salad.
  • ½ cup goat cheese or feta cheese (crumbled) Both provide great creaminess.
  • cup red onion (sliced, optional) Adds a mild sharpness, if you like.
  • ¼ cup fresh basil leaves (optional) Fresh basil brings a fragrant touch.
For the dressing
  • ½ teaspoon kosher salt Enhances all the flavors.
  • ½ teaspoon dijon mustard Adds a nice zip to the dressing.
  • 2 teaspoons honey A natural way to sweeten the dressing.
  • Tablespoons red wine vinegar or lemon juice Both work well for brightness.
  • 2 Tablespoons olive oil Use high-quality olive oil for the best flavor.

Method

Preparation
  1. Wash the berries well and slice the strawberries in half or quarters.
  2. In a small skillet over medium-low heat, add the butter, walnuts, and brown sugar. Toss for about 3 minutes until fragrant. Cool slightly.
Dressing
  1. Combine all dressing ingredients in a jar with a lid. Shake well to emulsify.
Assembly
  1. In a large bowl, add the lettuce and HALF of each ingredient, including the candied walnuts and some dressing. Toss well with tongs.
  2. Arrange on a platter or salad bowl, then sprinkle with the remaining ingredients and drizzle with more dressing. Enjoy!

Notes

To make the salad even more flavorful, use ripe, seasonal fruit. For added crunch, try toasting the walnuts before using them in the salad. If serving later, keep the dressing separate until just before serving to keep the salad fresh and crispy!
