  • 2 cups Shredded cheese (cheddar or a blend) Choose your favorite type for a delicious melt.
  • 1 Onion (diced) Adds great flavor; try sweet onions for a milder taste.
  • 1/2 cup Pickles (sliced) These add that classic burger crunch.
  • Ketchup Adjust the amount based on your taste preference.
  • Mustard Yellow mustard adds a tangy kick.
  • 1 teaspoon Salt Use kosher salt for the best flavor.
  • 1/2 teaspoon Pepper Freshly cracked is always best for seasoning.
  • 2 tablespoons Cooking oil Any neutral oil will work for frying.

Method
 

Preparation
  1. Heat cooking oil in a skillet over medium heat.
  2. Sauté diced onion until translucent.
  3. Add ground beef, season with salt and pepper, and cook until browned.
  4. Stir in ketchup and mustard to taste, then remove from heat.
  5. Layer the beef mixture, shredded cheese, and pickles on half of a tortilla.
  6. Fold the tortilla and cook until golden brown and cheese is melted.
  7. Repeat with remaining tortillas.
  8. Slice and serve warm.

Notes

For best results, avoid overcrowding the skillet when cooking the quesadillas for even browning. Allow the beef mixture to cool slightly before filling the tortillas to prevent sogginess. Adjust cooking time for crispiness by using less filling or increasing the cooking time slightly.
