Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Slice the strawberries and toss them with balsamic vinegar, salt, and pepper.
  3. Spread them out on a baking sheet and roast for about 15-20 minutes, until soft and caramelized.
  4. While the strawberries roast, toast slices of sourdough bread until golden brown.
  5. In a bowl, whip the ricotta cheese with a drizzle of honey (if using) until smooth and creamy.
Assembly
