Preparation
- Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- Cut the bread into cubes and place half of it in the prepared baking dish.
- Sprinkle the blueberries over the bread cubes.
- Add the remaining bread cubes on top of the blueberries.
- In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, and cinnamon until well combined.
- Pour the egg mixture evenly over the bread and blueberries, pressing down lightly to soak the bread.
- Let it sit for about 10-15 minutes to allow the bread to absorb the mixture.
Baking
- Bake in the preheated oven for 35-40 minutes, or until set and golden brown.
- Serve warm with maple syrup and a dusting of powdered sugar, if desired.
Notes
To store leftovers, allow to cool completely, then cover tightly or store in an airtight container. Keeps in the fridge for 3-4 days. Can be frozen in individual portions. For reheating, pop it in the oven or microwave.
