  • 8 oz wide Lo Mein noodles Cook and rinse them well for the best texture.
Main Ingredients
  • 1 pound ground pork Use lean pork for a healthier option.
  • 1/4 cup sliced green onions Great for garnish and added flavor.
  • 2 tablespoons sliced green onions Used for garnish.
  • 4 cups coleslaw mix Adds crunch and freshness.
Sauce
  • 1/2 cup low-sodium chicken broth Enhances the dish without too much salt.
  • 3 tablespoons mirin Sweet rice wine adds depth.
  • 2 tablespoons dark soy sauce Gives a rich color and flavor.
  • 1 tablespoon minced garlic Fresh garlic is a must for aroma.
  • 2 teaspoons grated ginger Adds warmth and spice.
  • 1 teaspoon sesame oil Intensifies the Asian flavor.
  • 1/2 teaspoon sriracha Adjust to your spice preference.
Cooking Oil
  • 1 tablespoon peanut oil Adds a nice nutty flavor.

Method
 

Preparation
  1. Cook the noodles and set aside.
  2. Brown the pork and green onions in peanut oil.
Mixing
  1. Whisk together the broth, mirin, soy sauce, garlic, ginger, sesame oil, and sriracha.
Combining
  1. Add the noodles, coleslaw mix, and sauce to the skillet.
  2. Toss for 2–3 minutes until well-coated. Garnish with remaining green onions.

Notes

For extra veggies, try adding bell peppers or snap peas. Substitute ground pork with ground chicken or turkey.
