For layering
  • 1 box vanilla wafers These add a delightful crunch that complements the pudding.
  • 4 ripe bananas Choose bananas that are slightly speckled for optimal sweetness.

Preparation
  1. In a saucepan, combine sugar, cornstarch, and salt. Gradually stir in the milk.
  2. Cook over medium heat, stirring constantly until thickened.
  3. In a bowl, whisk the egg yolks and slowly mix in some hot pudding. Return the egg mixture to the saucepan.
  4. Cook for 2-3 minutes more, then remove from heat. Stir in vanilla and butter.
Assembly
  1. In a trifle dish, layer wafers, bananas, and pudding. Repeat layers, finishing with pudding on top.
  2. Chill for at least 4 hours before serving.

Notes

To prevent bananas from browning, slice them just before layering. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
