Ingredients
  

For the Marinade
  • 1 kg chicken, cut into pieces You can use boneless chicken if preferred.
  • 1 cup yogurt Acts as a tenderizer.
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder Lends color and earthy flavor.
  • 1 teaspoon red chili powder Adjust for spice level.
  • 2 teaspoons garam masala Adds warmth and complexity.
  • Salt to taste salt
For Cooking
  • 2 tablespoons oil or ghee For sautéing the onions.
  • 2 onions, finely chopped
  • 4-5 green chilies, slit Adjust for spice level.
  • Fresh coriander for garnish Optional garnish.

Method
 

Marinating Chicken
  1. In a large bowl, combine the chicken pieces with yogurt, turmeric powder, red chili powder, garam masala, and salt. Let it sit for at least 30 minutes.
Cooking
  1. Heat the oil or ghee in a pot over medium heat. Add the finely chopped onions and sauté until they turn golden brown.
  2. Add the ginger-garlic paste and slit green chilies. Fry for a couple of minutes until fragrant.
  3. Add the marinated chicken to the pot. Cook it until browned on all sides.
  4. Cover the pot and reduce the heat to low. Allow it to cook for about 30-40 minutes until the chicken is tender.
  5. Garnish with fresh coriander before serving.

Notes

For best results, allow the chicken to marinate longer. Sauté onions until golden for sweetness. Serve with rice or naan.
