Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream the butter and sugars together.
  3. Add eggs one at a time, mixing well after each.
  4. Stir in the mint extract and food coloring, if using.
  5. In another bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture.
  7. Fold in the mint chocolate chips.
  8. Scoop dough onto a baking sheet.
  9. Bake for 10-12 minutes.
  10. Let them cool before serving.

Notes

Store cookies in an airtight container at room temperature for up to five days. Freeze for longer storage up to three months. For best results, chill dough for 30 minutes before baking for thicker cookies.
