For the tarts
  • 1 sheet sheet of homemade puff pastry Use store-bought if you’re short on time.
  • 2 pieces fresh peaches, sliced Choose ripe peaches for the best flavor.
  • 4 oz cream cheese, sliced Make sure it’s at room temperature for easy spreading.
  • 2 tbsp honey Adjust according to your desired sweetness.
  • 1 tsp cinnamon Freshly ground cinnamon adds richer flavor.
  • 1 tsp lemon juice Adds brightness to the sweetness of the peaches.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and cut it into 4 equal squares.
  3. Place the pastry squares onto a lined baking sheet.
  4. Arrange cream cheese slices on top of each square.
  5. Top the cream cheese with sliced peaches.
  6. Mix honey, cinnamon, and lemon juice. Drizzle over the peaches.
  7. Bake for 15-20 minutes until golden brown.
  8. Allow to cool slightly before serving.

Notes

Serve warm or cool with a scoop of vanilla ice cream or fresh mint on top. They are great additions to brunch or as a snack.
