For the Bowl
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice) Choose your favorite grain or go low-carb.
  • 1 cup roasted chickpeas (optional for paleo or keto) Adds protein and crunch.
  • 1 cup cherry tomatoes (halved) For a fresh, juicy burst.
  • ½ cup kalamata olives (pitted) For a salty, briny flavor.

For the Tzatziki
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free) For tangy richness.
  • 1 tbsp lemon juice (fresh) Brightens the tzatziki.
  • 1 clove garlic (minced) Adds flavor depth to the sauce.
  • 1 tbsp fresh dill (chopped) Enhances the tzatziki.
  • Salt & pepper (to taste) Season according to your preference.
For the Vinaigrette
  • 3 tbsp olive oil Essential for the vinaigrette.
  • 2 tbsp lemon juice (fresh) A zesty punch for the dressing.
  • 1 tsp honey (omit for Whole30) Adds sweetness to the vinaigrette.
  • 1 clove garlic (minced) Boosts the flavor of the vinaigrette.
  • ½ tsp dried oregano Complements the vinaigrette.
  • Salt & pepper (to taste) Adjust to your liking.

Method
 

Preparation
  1. Marinate the steak with olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper.
  2. Prepare the tzatziki by mixing yogurt, grated cucumber, lemon juice, garlic, dill, salt, and pepper. Chill in the fridge.
  3. Whisk together olive oil, lemon juice, honey, garlic, oregano, salt, and pepper for the vinaigrette.
Cooking
  1. Sear the steak in a hot skillet for 4-5 minutes per side. Let it rest, then slice thinly.
Assembly
  1. Assemble the bowl by layering grains, steak, and toppings. Top with tzatziki and vinaigrette.

Notes

For the best results, use high-quality sirloin steak and marinate it for at least 30 minutes. Assemble your bowl just before serving to keep everything fresh. Serve with crispy pita chips or a fresh green salad.
