Preparation
- Crush the Biscoff cookies and mix with melted butter.
- Press the mixture into the bottom of a springform pan.
- In a bowl, combine cream cheese, powdered sugar, and vanilla.
- Whip the cream until soft peaks form, then fold it into the cream cheese mixture.
- Pour the mixture onto the crust and smooth the top.
- Refrigerate for at least 4 hours to set.
- Serve chilled, topped with extra crushed Biscoff cookies if desired.
Notes
For best results, ensure cream cheese is at room temperature. Chill the mixing bowl if the kitchen is warm.
