  • 8 ounces pasta (e.g., fusilli or penne) Opt for your favorite shape!
  • 2 cups fresh corn kernels (or canned/frozen corn) Fresh is best, but any will do.
  • 1 red bell pepper, diced Adds a sweet crunch.
  • 1 cup cherry tomatoes, halved Juicy and vibrant.
  • 1/2 red onion, diced For a mild, sharp flavor.
  • 1/4 cup fresh cilantro, chopped Brings a fresh herb note.
Dressing
  • 1/4 cup mayonnaise Creamy dressing base.

Preparation
  1. Cook the pasta and let it cool.
  2. Mix pasta with corn, red bell pepper, cherry tomatoes, red onion, and cilantro.
  3. Whisk mayonnaise, lime juice, chili powder, salt, and pepper.
  4. Combine the dressing with the pasta salad.
  5. Chill for at least 30 minutes before serving. Enjoy!

Notes

For added flavor, try roasting your corn before adding. Make sure to cook pasta al dente, and let salad chill to meld flavors.
