Preparation
- Heat a little olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Sauté until softened.
- Stir in the chopped carrots, celery, and sliced mushrooms. Cook for about 5 minutes.
Cooking
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat. Add the dried thyme, dried basil, salt, and pepper. Simmer for 15-20 minutes until the vegetables become tender.
- If desired, stir in the cooked rice or quinoa for added texture.
- Garnish with fresh parsley before serving.
