  • 2 cups Kodiak pancake mix or any protein pancake mix
  • 1 lb ground sausage, browned and crumbled For flavor
  • 2 cups milk Try Fairlife for extra protein
  • 2 large eggs To help bind the muffins
  • ¼ cup maple syrup For a touch of sweetness
  • 1 cup shredded cheese Cheddar or Colby jack works well

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. Spray a mini muffin tin well to prevent sticking.
  3. In a bowl, whisk together the pancake mix, milk, eggs, and maple syrup until smooth.
  4. Fold in the cooked sausage and shredded cheese until well combined.
  5. Fill each muffin cup ¾ full with the batter.
Baking
  1. Bake for 15 minutes or until the muffins are golden and firm to the touch.
  2. Cool for a few minutes before serving or storing.
