Ingredients

Main Ingredients
  • 1.5 pounds Beef stew meat - Cut into bite-sized pieces for even cooking.
  • 1 pound Baby potatoes - Halved for even cooking; choose small ones for the best texture.
  • 4 tablespoons Unsalted butter - Melted for the flavorful garlic butter sauce.
  • 3 cloves Garlic - Minced for a punch of flavor that enhances the dish.
  • 1 teaspoon Onion powder - Adds depth to the flavor; a must-have in savory dishes.
  • 1 teaspoon Smoked paprika - For a smoky flavor that pairs perfectly with beef.
  • 0.5 teaspoon Dried thyme - Enhances the aroma and overall taste.
  • 0.5 teaspoon Dried rosemary - Adds a fragrant touch that complements the beef.
  • 0.5 teaspoon Salt - Adjust to your taste for the perfect seasoning.
  • 0.25 teaspoon Black pepper - For a bit of seasoning kick.
  • 0.25 cup Beef broth - Keeps the dish moist and flavorful.
  • 1 tablespoon Olive oil - For searing the beef for added richness.

Method

Preparation
  1. Gather all ingredients. Cut the beef into bite-sized pieces and halve the baby potatoes.
  2. (Optional) Parboil the baby potatoes for a few minutes to soften them slightly.
  3. Heat olive oil in a skillet over medium-high heat. Sear the beef bites until browned on all sides.
Combining
  1. In a small bowl, combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper to create the garlic butter sauce.
  2. In the slow cooker, place the halved baby potatoes and seared beef. Pour the garlic butter sauce over the top and add beef broth.
Cooking
  1. Cover the slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours until the beef is fork-tender.
  2. Let the dish rest for about 10 minutes before serving.

Notes

For best results, make sure to sear the beef well before adding it to the slow cooker. If short on time, you can skip parboiling but it may take longer to cook. Adjust seasonings to preference; for spice, consider cayenne or crushed red pepper flakes. Store leftovers in the fridge for up to three days or freeze for up to three months.
