Preparation
- Wash and dry all produce.
- Slice the English cucumber into 1/4-inch rounds.
- Slice the cherry tomatoes in half.
- Thinly slice the red onion.
- In a large salad bowl or serving platter, combine the cucumber rounds, halved tomatoes, red onion slices, and drained mozzarella pearls.
Assembly
- Drizzle the extra virgin olive oil over the salad.
- Sprinkle generously with salt, coarse black pepper, and red chili flakes (if using).
- Gently toss the salad to coat everything in the oil and seasonings.
- Tuck fresh basil leaves throughout the salad.
- Just before serving, drizzle the balsamic glaze over the top in a zig-zag pattern.
- Serve immediately for the best crunch.
Notes
For the best results, use sun-ripened cherry tomatoes and fresh basil. A good-quality extra virgin olive oil enhances flavor. Adjust the seasoning to your taste.
