For the caramelized onions
  • 2 large yellow onions, thinly sliced The sweet base of our bake.

For the potato layers
  • 4 large Yukon Gold potatoes, sliced ¼-inch thick The heart of the dish.
  • 1 tablespoon butter (for greasing) Keeps the bake from sticking.
For the creamy topping
  • 1 cup shredded Gruyère cheese For that gooey topping.
  • 1/2 cup Parmesan cheese, grated Adds a salty, nutty flavor.
  • 1 cup heavy cream or whole milk For creaminess.

Method
 

Caramelize the onions
  1. Melt butter and olive oil in a skillet over medium heat.
  2. Add the onions, salt, pepper, and sugar (if using).
  3. Cook, stirring occasionally, for about 15-20 minutes until golden brown.
Prepare the potatoes
  1. While onions cook, slice Yukon Gold potatoes into ¼-inch rounds.
Assemble the bake
  1. Grease a baking dish with butter.
  2. Layer half of the potato slices at the bottom.
  3. Add half of the caramelized onions, half of the Gruyère cheese, and half of the Parmesan cheese.
  4. Repeat the layers.
Bake the dish
  1. In a bowl, mix heavy cream, salt, pepper, and fresh thyme.
  2. Pour over the layered potatoes.
  3. Cover with foil and bake for 60 minutes.
  4. Remove foil and bake for an additional 15 minutes until the top is golden and bubbly.
Serve & enjoy
  1. Let the bake sit for a few minutes before serving.
  2. Top with fresh thyme sprigs and extra Parmesan, if desired.
  3. Optionally, sprinkle crispy fried onions on top.
