Caramelize the onions
- Melt butter and olive oil in a skillet over medium heat.
- Add the onions, salt, pepper, and sugar (if using).
- Cook, stirring occasionally, for about 15-20 minutes until golden brown.
Prepare the potatoes
- While onions cook, slice Yukon Gold potatoes into ¼-inch rounds.
Assemble the bake
- Grease a baking dish with butter.
- Layer half of the potato slices at the bottom.
- Add half of the caramelized onions, half of the Gruyère cheese, and half of the Parmesan cheese.
- Repeat the layers.
Bake the dish
- In a bowl, mix heavy cream, salt, pepper, and fresh thyme.
- Pour over the layered potatoes.
- Cover with foil and bake for 60 minutes.
- Remove foil and bake for an additional 15 minutes until the top is golden and bubbly.
Serve & enjoy
- Let the bake sit for a few minutes before serving.
- Top with fresh thyme sprigs and extra Parmesan, if desired.
- Optionally, sprinkle crispy fried onions on top.
