  • 1 box (15.25 oz) white cake mix Use a quality mix for the best texture.
  • 2 large eggs Fresh eggs work best.
  • 1/3 cup vegetable oil This keeps the cookies moist.
  • 1/4 teaspoon Kelly green gel food coloring Gel gives a richer color than liquid.
  • 3 tablespoons granulated sugar This adds extra sweetness.
  • 6 tablespoons powdered sugar For a delightful finish.

Preparation
  1. In a large mixing bowl, combine the white cake mix, eggs, and vegetable oil.
  2. Stir until a sticky dough forms.
  3. Add the Kelly green gel food coloring and mix until combined.
  4. Cover the bowl with plastic wrap. Chill the dough in the refrigerator for 30 minutes.
Baking
  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Place granulated sugar in one bowl and powdered sugar in another.
  3. Use a tablespoon-sized cookie scoop for the dough.
  4. Roll each scoop of dough into a ball between your hands.
  5. Roll each dough ball in the granulated sugar to coat.
  6. Next, roll each sugar-coated dough ball in the powdered sugar until covered.
  7. Place the coated cookie dough balls on the prepared baking sheet, spacing 2 inches apart.
  8. Bake for 9-12 minutes, until the cookies spread slightly and tops are crackled.
  9. Remove from the oven and let them cool on the baking sheet for 5 minutes.
  10. Transfer cookies to a wire rack to cool completely.

Notes

Cookies can be paired with milk or hot cocoa. They also make perfect party favors wrapped in clear bags tied with green ribbons. For best results, don't over-bake and ensure the dough is chilled.
