  • 500 g chicken, cut into pieces Choose high-quality chicken for best flavor.
  • 2 tablespoons oil For frying.
  • 1 small onion, finely chopped Adds sweetness and depth.
  • 2 medium tomatoes, chopped Provides acidity and moisture.
  • 2 tablespoons ginger-garlic paste Adds warmth and flavor.
Spices
  • 1 teaspoon cumin seeds To start the flavor base.
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala For a depth of flavor.
  • 1 teaspoon turmeric powder
  • to taste salt
Garnish
  • to taste fresh coriander For garnish.

Method
 

Preparation
  1. Heat the oil in a pan and add the cumin seeds. Allow them to splutter.
  2. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
  3. Stir in the ginger-garlic paste and sauté for another minute.
  4. Add the chopped tomatoes and cook until softened, about 5-7 minutes.
  5. Mix in the spices (coriander powder, cumin powder, garam masala, turmeric powder) and salt. Stir to form a thick paste.
Cooking
  1. Add the chicken pieces to the pan, making sure they are all coated with the spice mixture.
  2. Cover and cook on low heat for about 20-25 minutes, stirring occasionally, until chicken is cooked through and dry.
Serving
  1. Garnish with fresh coriander before serving.

Notes

Serve with basmati rice, naan, or a side salad. This dish reheats well and is perfect for meal prep. Adjust spice levels to your preference. Allow resting time after cooking for better flavor.
