Method
 

Preparation
  1. Layer the vegetables (onion, garlic, carrots, and potatoes) in the bottom of the crockpot.
  2. Rinse the corned beef brisket under cold water.
  3. Place the brisket on the vegetables. Add beef broth, black peppercorns, and bay leaves.
Cooking
  1. Cover the crockpot and cook on low for 8-10 hours or high for 4-5 hours.
  2. Remove the brisket from the crockpot, let it rest, then slice against the grain.
  3. Serve with mustard if desired.

Notes

To ensure maximum tenderness, choose a brisket with a good amount of marbling and always slice against the grain. You can also add other vegetables like cabbage or parsnips for added variety.
