Preparation
- Layer the vegetables (onion, garlic, carrots, and potatoes) in the bottom of the crockpot.
- Rinse the corned beef brisket under cold water.
- Place the brisket on the vegetables. Add beef broth, black peppercorns, and bay leaves.
Cooking
- Cover the crockpot and cook on low for 8-10 hours or high for 4-5 hours.
- Remove the brisket from the crockpot, let it rest, then slice against the grain.
- Serve with mustard if desired.
Notes
To ensure maximum tenderness, choose a brisket with a good amount of marbling and always slice against the grain. You can also add other vegetables like cabbage or parsnips for added variety.
