Preparation
  1. In a blender or mixing bowl, combine eggs, milk, sparkling water, melted butter, and salt. For sweet crepes, add vanilla extract and sugar.
  2. Blend or whisk until smooth. Gradually add the flour to avoid lumps.
  3. Optionally, let the batter rest for 30 minutes to improve texture.
Cooking
  1. Heat a non-stick pan over medium heat and coat with butter.
  2. Pour about 1/4 cup of batter into the pan and swirl to create a thin layer.
  3. Cook for 1-2 minutes until edges lift and the bottom turns lightly browned. Flip and cook the other side for 30 seconds.
  4. Repeat with remaining batter, adding butter as needed.
