Dressing

Method
 

Preparation
  1. Cook the tri-color rotini according to package instructions and let it cool.
  2. In a large bowl, combine the cooked pasta with cherry tomatoes, cucumbers, red bell peppers, black olives, mozzarella, and parmesan cheese.
Make Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
Combine
  1. Pour the vinaigrette over the pasta salad and toss to mix well.
  2. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Perfect as a stand-alone dish, or serve alongside grilled chicken or sandwiches. Garnish with fresh herbs like basil or parsley for added flavor.
