  • 2 lbs chicken thighs Juicy and flavorful, ideal for grilling or roasting.
  • 3 tablespoons olive oil Helps spices stick and adds richness.
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon garlic powder For an extra hit of flavor.
  • Salt and pepper To taste.
For the garlic sauce
  • 4 cloves minced garlic
  • 1/2 cup plain yogurt Forms a creamy, tangy sauce.
  • 1/4 cup mayonnaise
  • 2 tablespoons lemon juice
For serving
  • Pita bread For serving.
  • Sliced tomatoes
  • Lettuce
  • Pickles

Method
 

Preparation
  1. Preheat your grill or oven to medium-high heat.
  2. In a large bowl, mix olive oil, ground cumin, ground coriander, paprika, turmeric, garlic powder, salt, and pepper. Toss in chicken thighs to coat well.
Cooking
  1. Grill chicken for about 6-7 minutes on each side until cooked through, or roast in oven at 400°F for 25-30 minutes.
  2. While chicken is cooking, prepare the garlic sauce by combining minced garlic, yogurt, mayonnaise, and lemon juice in a small bowl until smooth.
Serving
  1. Once chicken is ready, let it rest for a few minutes, then slice thinly.
  2. Serve in warm pita bread, drizzled with garlic sauce and topped with tomatoes, lettuce, and pickles.

Notes

For best results, let chicken marinate in spices for at least an hour or overnight. Check internal temperature to ensure chicken reaches 165°F. Enjoy fresh for optimal taste.
