Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Prepare a 15x10-inch jelly roll pan with parchment.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, beat eggs and sugar until thick. Mix in the flour mixture, grated carrots, and walnuts.
  4. Pour the batter into your prepared pan, spreading it evenly.
Baking
  1. Bake for 12-15 minutes until the cake springs back when gently touched.
Cooling and Filling
  1. As soon as it’s out, roll the cake with the parchment paper and let it cool completely.
  2. For the filling, mix cream cheese, butter, powdered sugar, and vanilla until smooth.
  3. Unroll the cooled cake, spread the cream cheese frosting, and roll it up again.
  4. Chill in the fridge for at least 30 minutes before slicing and serving.

Notes

For best results, measure your ingredients carefully. Let the cake cool completely before frosting to avoid melting the filling. You can also add spices like nutmeg for additional flavor.
