For the crust
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter for binding
For the filling
  • 8 oz cream cheese softened
  • 1/2 cup sugar
  • 2 eggs lightly beaten
  • 1 tsp vanilla extract
  • 2 cups fresh apples chopped (e.g. Granny Smith or Honeycrisp)
  • 1 tsp cinnamon for added flavor
For the topping
  • 1/2 cup caramel sauce store-bought or homemade

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until a sandy texture forms.
  3. Press this mixture firmly into a greased baking pan.
  4. Bake the crust for about 8-10 minutes until golden.
Filling preparation
  1. While the crust cools, mix the cream cheese until creamy and smooth.
  2. Add sugar, eggs, and vanilla and beat until combined.
  3. Fold in the chopped apples and cinnamon.
  4. Pour the filling over the cooled crust.
Baking
  1. Bake for 25-30 minutes, or until the center is set.
  2. Allow to cool, then drizzle with caramel sauce.

Notes

To ensure the cheesecake bars turn out perfectly, beat the cream cheese until smooth to avoid lumps. Do not overmix the batter and allow full cooling before cutting. Store leftovers in an airtight container in the refrigerator for up to 5 days.
