- Cook the penne pasta and drain.
- Season the chicken breasts with Cajun seasoning.
- Heat olive oil in a skillet, and cook the chicken until golden.
- Add onion and bell peppers to the skillet, and sauté.
- Mix in chicken broth and heavy cream, then simmer.
- Return sliced chicken to the skillet and add cooked pasta, tossing to mix.
- Serve hot with parsley on top.
Notes
Cajun Chicken Pasta stores well in the fridge for up to 3 days. To reheat, simply warm it in a skillet over low heat, adding a splash of chicken broth to loosen the sauce. If you want to freeze it, store it in an airtight container for up to a month. Thaw it overnight in the fridge before reheating. The creamy sauce might separate a bit, so stir well when reheating.
