Method
 

Cooking
  1. Cook the penne pasta and drain.
  2. Season the chicken breasts with Cajun seasoning.
  3. Heat olive oil in a skillet, and cook the chicken until golden.
  4. Add onion and bell peppers to the skillet, and sauté.
  5. Mix in chicken broth and heavy cream, then simmer.
  6. Return sliced chicken to the skillet and add cooked pasta, tossing to mix.
  7. Serve hot with parsley on top.

Notes

Cajun Chicken Pasta stores well in the fridge for up to 3 days. To reheat, simply warm it in a skillet over low heat, adding a splash of chicken broth to loosen the sauce. If you want to freeze it, store it in an airtight container for up to a month. Thaw it overnight in the fridge before reheating. The creamy sauce might separate a bit, so stir well when reheating.
