Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Stir in the oats, cinnamon, honey or maple syrup, and vanilla extract until well combined.
  4. If using, fold in nut butter, chocolate chips, or nuts.
  5. Pour the mixture into the prepared baking pan and spread evenly.
  6. Bake for 20-25 minutes, or until the edges are golden and a toothpick inserted comes out clean.
  7. Let cool before slicing into bars. Enjoy!

Notes

Store leftover Banana Oatmeal Bars in an airtight container in the fridge for up to five days. You can also freeze them for longer storage; wrap individual bars in plastic wrap, then place them in a freezer bag for up to three months. To reheat, microwave for 15-20 seconds or let sit at room temperature.
