  • 8 oz pasta (e.g., rotini or elbow macaroni) Use your favorite type!
  • 1 lb ground beef Ground turkey or chicken works too.
  • 1 packet taco seasoning For quick flavor!
  • 1 cup cherry tomatoes, halved Fresh and juicy.
  • 1 cup bell pepper, diced Add color and crunch.
  • 1 cup corn (fresh or canned) Sweet and satisfying.
  • 1 cup black beans, rinsed and drained For protein and fiber.
  • 1/2 cup red onion, diced Adds a little zing.
  • 1/2 cup shredded cheddar cheese Go for your preferred cheese.
  • 1/4 cup fresh cilantro, chopped For freshness!
  • 1/2 cup ranch dressing Creamy goodness.
  • 1/4 cup salsa Adds spice and flavor.
  • to taste salt and pepper Season to your preference.

Method
 

Preparation
  1. Cook the pasta according to package instructions; drain.
  2. In a skillet, cook the ground beef over medium heat until browned.
  3. Stir in taco seasoning and water; simmer for 5 minutes.
  4. In a bowl, combine pasta, seasoned beef, tomatoes, bell pepper, corn, black beans, red onion, and cheese.
  5. Mix ranch dressing and salsa, then pour over the salad.
  6. Toss to combine; season with salt and pepper.
  7. Garnish with cilantro.
  8. Serve immediately or refrigerate for later.

Notes

This Taco Pasta Salad is versatile and can be served with tortilla chips, as a side with green salad, or with grilled chicken. Add jalapeƱos for heat, or lime juice for a tangy twist!
